Vegan Slow Cooker 3 Bean Chili- a delicious and hearty chili that’s ideal for meal prep!

Vegan Slow Cooker 3 Bean Chili

Chili is one of my go-to meal prep dishes. It’s nutritious, filling and it’s chocked full of protein and fiber. This version, cooked in the slow cooker requires only 10 minutes of prep time. It makes a hearty amount that’s perfect for leftovers.

This is a basic recipe that can be customized to your taste or to what’s in your refrigerator. I’ve added everything from quinoa to zucchini to this recipe and it turns out great every time!

Vegan Slow Cooker 3 Bean Chili

Ingredients:

Yellow onion (diced)

Garlic cloves (minced)

Green bell pepper (diced)

Celery stalks (chopped)

Carrots (chopped)

Vegetable stock

Fire-roasted diced tomatoes

Canned corn

Pinto beans (drained and rinsed)

Kidney beans (drained and rinsed)

Black beans (drained and rinsed)

Taco seasoning

Vegan Slow Cooker 3 Bean Chili

Dice the onion, bell pepper, carrots, celery stalks, and mince the garlic. Drain and rinse the pinto, kidney, and black beans. Add all the ingredients to the slow cooker and cook on low for 6 hours or until all the vegetables are tender. If you prefer the chili to be a little thinner, you can add more vegetable stock.

Serve with non-dairy shredded cheddar cheese, non-dairy sour cream, and avocado slices.

Store in an air-tight container either in the refrigerator (for a few days) or in the freezer (for a few months).

Ingredients
  

  • 1 Yellow onion, diced
  • 3 garlic cloves, minced
  • 1 green bell pepper, chopped
  • 2 carrots, chopped
  • 3 celery stalks, choppped
  • 3 cups vegetable stock
  • 1 can diced tomatoes (fire roasted)
  • 1 can corn kernals
  • 1 can pinto beans
  • 1 can black beans
  • 1 can kidney beans
  • 2 tsp taco seasoning

Instructions
 

  • Dice the onion, bell pepper, carrots, celery stalks, and mince the garlic. Drain and rinse the pinto, kidney, and black beans. Add all the ingredients to the slow cooker and cook on low for 6 hours or until all the vegetables are tender.
