Vegan Roasted Veggie Hummus Pitas- Nutritious pitas filled with hummus, spinach, and seasonal roasted vegetables.

Simple ingredients (hummus, spinach, red onion, red bell pepper, and zucchini) come together to form something delicious with these veggie pitas. These pitas can be made in less than 20 minutes, including cooking time. They are ideal for a quick lunch or meal prep (just be sure to keep the ingredients separate so the pitas don’t get soggy).
Vegan Roasted Veggie Hummus Pitas
Ingredients needed:
2 small zucchini, sliced and quartered
1 red onion, sliced
2 red bell pepper, chopped
(approximately) 3 tbsp Olive oil
2 tsp Italian seasoning
Hummus (any kind of hummus works except dessert-style hummus)
4 Pitas
2 cups loosely packed baby spinach (washed) (you could also substitute mixed salad greens or arugula)
Vegan Feta cheese (this is my favorite brand)
Instructions:
Preheat the oven to 425 degrees. Chop the zucchini, red onion, and red bell pepper and arrange them on a lined baking sheet. Try to make sure they are cut (roughly) the same size so they cook evenly. To ensure even cooking, make sure they are not overlapping. Cook for 10 minutes, flip the veggies and cook for an additional 5 minutes. Let the vegetables cool slightly.

Warm the pitas in the oven or in a skillet. Spread with a layer of hummus.

Arrange the baby spinach and top with the roasted vegetables. Sprinkle with dairy-free feta cheese and dig in!
