Vegan Roasted Delicata Squash Apple and Pear Salad- This beautiful roasted Delicata Squash salad is the perfect fall side dish. It is made with greens, roasted delicata squash, apples, pepitas, Bartlett pears and a tangy vinigarette.

What is Delicata Squash?

Delicata Squash is is a variety of winter squash with cream-coloured cylindrical fruits striped in green or orange. It is also known as peanut squash, Bohemian squash, or sweet potato squash.

Unlike other varieties of squash, Delicata does not need to be peeled; the rind is edible.

Vegan Roasted Delicata Squash Apple and Pear Salad

Ingredients needed:

1 Delicata squash (cut into 1/4 inch rings with the seeds removed. The skin is edible so you don’t have to peel the squash.)

3 tbsp olive oil

2 cups mixed salad greens

1 honey crisp apple, diced

1 Barlett pear, sliced

1/4 cup pepitas

5 sage leaves, chopped

For the Dressing:

2 tbsp olive oil

1 tsp apple cider vinegar

1 tsp minced garlic

1 tbsp maple syrup

1 tsp Dijon mustard

Salt and pepper to taste

Directions:

Vegan Roasted Delicata Squash Apple and Pear Salad

Cut the ends off the squash. The skin is edible so there is no need to peel.

Cut the squash into 1/2 inch rings and cut the seeds out. Preheat the oven to 400 degrees Fahrenheit. Arrange the squash on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt and pepper. Bake the squash for 18-20 minutes or until tender.

Toss the salad greens, diced apple, pear slices, pipits, and sage leaves together. Add the roasted Delicata slices.

In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, minced garlic, Dijon mustard and salt and pepper. Dress the salad and enjoy!

  • 3 cups mixed salad greens

  • 5 Sage leaves, chopped
