Vegan Green Goddess Dressing

Green Goddess dressing started popping up at every health food restaurant a few years ago. It may seem like a relatively new concoction, but it’s actually almost 100 years old! It was created at the Palace Hotel in San Francisco when the head chef wanted something to pay tribute to actor George Arliss and his hit play, The Green Goddess. The dressing was a big hit and it was replicated throughout the years.

The original version was a mayonnaise base with herbs, anchovies, and vinegar. Not the healthiest and definitely not vegan! I want to create a Green Goddess dressing inspired by the original, but lighter and healthier. In my version, the heavy mayo is replaced with silken tofu. I added a few tablespoons of vegan mayonnaise for creaminess . The silken tofu really cuts down on the calories and fat. This dressing gets the green tint and a ton of flvor from fresh herbs. I used parsley, sweet mint and dill, but you can mix things up and add terragon and cilantro. If you have a herb garden, now’s the time to raid it!

This dressing takes minutes to make and there’s minimal clean up.

Add the silken tofu, vegan mayo, garlic, lemon juice and herbs to a food processor and blend. Season with a liberal amount of salt and pepper.

I put this dip on everything from salads to cut veggies to wraps. This is the perfect topping for those times when you food needs a little extra something!

Ingredients
  

  • 1 Cup Silken tofu
  • 2 Tbsp Vegan Mayonnaise
  • 1 Clove Garlic, minced
  • 1/2 Cup Parsley, fresh
  • 1/2 Cup Mint, fresh
  • 1/2 Cup Dill, fresh
  • 2 Tbsp Chopped chives
  • 2 Tbsp Fresh squeezed lemon juice
  • Salt and pepper to taste

Instructions
 

  • Combine all ingredients in the food processor. Mix until combined. Store leftover amount in refrigerator for up to 5 days.
