Vegan Granola Cups with Yogurt

These granola cups are ideal for breakfast or as an after-school snack for kids. The cups require only 5 ingredients (overripe banana, quick oats, cinnamon, maple syrup and pure vanilla extract) and they takes minutes to prepare.

Vegan Granola Cups with Yogurt

Ingredients needed:

Ripe banana

Maple syrup

Quick oats

Pure vanilla extract

Cinnamon

Toppings:

Dairy-free yogurt

Fresh fruit

Note- you’ll want to use a very ripe banana for this recipe. The ideal banana is soft with dark brown spots.

In a medium bowl, mash the very ripe banana with a fork. (an over-ripe banana will be very easy to mask up). Add the maple syrup, pure vanilla extract, and cinnamon and stir together. Add the oats and stir until everything is combined.

Vegan Granola Cups with Yogurt

Grease a muffin tray. Add the mixture to a muffin tray (it will make 6 servings). Press the mixture into the cups and use a spoon to create a cup shape by pressing up the sides. Preheat oven to 350 degrees. Place the muffin tray in the freezer for 5 minutes while the oven preheats.

Bake the granola cups for 28-30 minutes. Let cool for 10 minutes and then remove from the tray.

Scoop in your favorite non-dairy yogurt and top with fresh berries.

If you’d like to enjoy these cups another time, store them in an air-tight container. They will last a few days. Add the yogurt when you’re ready to eat them or otherwise they will get soggy.
