Vegan Crock Pot Sweet Potato and Black Bean Stew

Vegan Crock Pot Sweet Potato and Black Bean Stew

Ingredients needed:

3 cups sweet potatoes

1 15.5 oz can black beans, drained and rinsed

1 15.5 oz can corn

3/4 cup quinoa

1 small yellow onion, diced

1 15.5 oz can fire-roasted tomatoes

4-5 cups low-sodium vegetable broth (you can add more broth is you like a thinner stew)

2 tbsp cumin

Salt and pepper to taste

Vegan sour cream, scallions, and lime wedge for garnish

Directions:

Vegan Crock Pot Sweet Potato and Black Bean Stew

Add all of the ingredients to the slow cooker. Cook on low heat for 5 hours or until the sweet potatoes are tender.

Leftovers can be stored in an airtight container in the refrigerator for 3-4 days, or in the freezer for 2 months.

  • 1 15.5 oz can black beans, drained and rinsed
  • 1 15.5 oz can corn
  • 3/4 cup quinoa, dry
  • 1 small yellow onion, diced
  • 1 15.5 oz can fire-roasted tomatoes
  • 4-5 cups low-sodium vegetable broth (you can add more broth is you like a thinner stew)
  • 2 tbsp cumin
  • salt and pepper to taste
  • Vegan sour cream, scallions, and lime wedge for garnish
