Vegan Chocolate Chip Peanut Butter Cookies
Ingredients:
2 tbsp Bob’s Red Mill egg replacer (if using another brand, be sure to check the instructions on the back to replace 2 eggs)
2 1/2 cups all-purpose flour
1 1/2 tsp baking soda
1 tsp salt
1 cup vegan butter, room temperature
1 cup brown sugar
3/4 cup granulated sugar
2 tbsp applesauce
1 cup crunchy peanut butter
2 tsp pure vanilla extract
1 cup dairy-free chocolate chips
Directions:
Preheat your oven to 350°F . Line a baking sheet with parchment paper.
In a small bowl, add the egg replacer with 4 tbsp of water. These directions are for the Bob’s Red Mill egg replacer. If you are using a different brand, be sure to check the instructions on the back. You will need to replace 2 eggs.
In the bowl of a stand mixer or in a large mixing bowl with an hand-held mixer, cream together the vegan butter, peanut butter, applesauce, brown sugar, white sugar, and vanilla extract until light and fluffy.
In a separate mixing bowl, whisk together the all-purpose flour, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until well combined. Fold in the chocolate chips.
Use a cookie scoop or spoon to form 1 1/2 tbsp of dough into balls, and place them on the prepared baking sheet. Flatten the balls slightly with the palm of your hand.
Bake the cookies for 12-14 minutes, or until they are lightly golden brown on the edges. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
