These zucchini chips are a great, summer snack. They’re crispy on the outside and tender in the middle. They’re a healthy alternative to potato chips next time you’re looking for something crunchy with a bit of salt.
Vegan Air Fryer Breaded Zucchini Chips
Ingredients:
1 Zucchini
1/4 cup all-purpose flour
4 tbsp Almond milk
2 tbsp Ground Flaxseed
1/2 cup Panko breadcrumbs
2 tbsp Nutritional yeast
2 tsp Italian seasoning
Salt (for serving)
Instructions:

Thinly slice zucchini (approximately 1/8 of an inch).

Set out 3 small bowl. In the first bowl, add the all-purpose flour. In the second bowl, add the almond milk and ground flaxseed (let sit for 5 minutes before using). In the third bowl, add the Panko breadcrumbs, nutritional yeast and Italian seasoning.

First dip the zucchini slice into the flour (make sure both sides are covered with each dip) and shake off the excess. Second, dip the slice into the flax egg. Third, dip the zucchini into the breadcrumb mixture.

Spray the air fryer basket with oil and place the zucchini chips on it. To ensure proper cooking, make sure they do not overlap.
Set the air fryer temperature to 400 degrees and cook for 6 minutes. (You will need to do multiple batches).
