If you’ve never roasted a whole cauliflower, I urge you to try it! This recipe is foolproof and it requires only 4 ingredients. The roasted cauliflower is a show-stopped at any dinner table. It can be customized with many different spices or sauces. I kept this recipe simple by slathering the cauliflower in olive oil and adding salt and pepper.

Whole cauliflower

Olive oil

Salt and pepper

Cauliflower is a great choice for anyone looking to eat a healthy diet. It’s very low in calories yet high in vitamins. It’s also high in fiber and antioxidants. Cauliflower is a very versatile vegetable that can be used to replace grains and legumes in your diet.

How to Roast Whole Cauliflower

Turn the cauliflower over. Break or cut off the leaves. Cut the stem down to the base so the cauliflower can sit upright. Be careful not to cut it too short, or the florets will start falling off.

Brush (or rub with your hands) olive oil all over the florets. Make sure that the head is entirely covered. Season with salt and pepper.

Place the cauliflower on a lined baking sheet. Cover the top and sides of the cauliflower tightly with a piece of tin foil. Bake for 40 minutes at 400 degrees Fahrenheit. Then, remove the tin foil and bake uncovered for an additional 50 minutes.

Once the cauliflower is cooked, it will be browned on the outside and tender on the inside (the knife should slide right through it).

Garnish with parsley and enjoy!

  • 1 Head Cauliflower
  • 2-4 Tbsp Olive oil (enough to coat the cauliflower head)
  • Salt and pepper to taste
  • Fresh parsley (garnish)
