Green beans are known by many common names, including French beans, string beans, and snap beans. They make a great side dish for summer meals and they require little preparation.
Green beans are high in vitamin K, and they also contain a decent amount of calcium.
I always blanch my green beans so the color stays vibrant and the texture remains crisp and not mushy.
What is Blanching?
Blanching is a food preparation technique in which food is briefly immersed in hot liquid, like boiling water or oil, often but not always as a prelude to cooking it further.
How to Cook Fresh Green Beans

Rinse the beans in a colander and trim the ends off. While you are working, bring a large pot of salted water to a boil. Once the water starts boiling, drop the beans in and let them cook for 2 minutes. While the beans are cooking, fill a bowl with ice water.
Drain the green beans and transfer them to the ice water bowl. Let them sit for 15-20 seconds.

Drain the beans and arrange them on a paper towel to dry.
Use in any recipe that calls for green beans or simply serve with a drizzle of olive oil, salt, and pepper and garnish with lemon slices.
