Hearty Vegan Black Eyed Pea Soup
Ingredients needed:
2-3 tbsp olive oil
1 small yellow onion, diced
3 celery ribs, diced
3 carrots, diced
3 garlic cloves, minced
2 tsp smoked paprika
2, 15.5 oz cans of black eyed peas, drained and rinsed
1 14 oz can of fire-roasted diced tomatoes
3 cups kale, de-stemmed
4-5 cups vegetable broth
salt and pepper to taste
Directions:

In a large pan or pot, add the olive oil, onions, carrots and celery and sauté over medium heat for 5-7 minutes. Add the garlic and smoked paprika and cook for an additional 2 minutes.

Add the drained and rinsed black eyed peas, fire-roasted diced tomatoes and vegetable broth. Bring to a boil, cover and then reduce to a simmer. Let the soup simmer for 10 minutes. Remove from the heat and stir in the kale. Season with salt and pepper.
