Easy Vegan Tzatziki No Tofu or Cashews

Tzatziki is one of my favorite sides for grilled vegetables. This recipe can be whipped up in minutes and it contains no nuts or soy!

What is Tzatziki?

Tzatziki is a dip/sauce that’s found in the cuisines of Southeast Europe and the Middle East. It is traditionally made of yogurt mixed with cucumbers, garlic, salt, olive oil, sometimes with vinegar or lemon juice, and herbs such as dill, mint, parsley, and thyme. It’s often served with roasted vegetables or gyros.

Easy Vegan Tzatziki No Tofu or Cashews

This vegan Tzatziki takes minutes to prepare and it contains only 6 ingredients!

Ingredients needed:

Cucumber

Plain, non-dairy yogurt (I used Oatly Plain Oatgurt)

Lemon

Garlic

Fresh Dill

Salt and pepper

Grate cucumber over a bowl. Don’t remove the skin.

There should be roughly 1 cup of cucumber after grating.

Place the grated cucumber in a fine-mesh strainer and press the water out. Transfer the cucumber to paper towels and squeeze out the remaining water. You want to try to remove as much of the water as possible so your Tzatziki won’t be runny.

Easy Vegan Tzatziki- No Tofu or Cashews.

Stir the grated cucumber and non-dairy yogurt together. Add minced garlic, freshly squeezed lemon juice, chopped fresh dill, and season with salt and pepper. Optional- garnish with diced cucumber.

Serve and enjoy!

  • 1 Cucumber (medium to large)
  • 1 5.3 oz container Oatly plain Oatgurt (or any other non-dairy, plain yogurt)
  • 1 1/2 Tbsp Lemon juice (freshly squeezed)
  • 2 Cloves garlic (minced)
  • 1/2 Cup Fresh dill (chopped)
  • Salt and pepper to taste

Instructions
 

  • Grate cucumber over a bowl. Don't remove the skin. There should be roughly 1 cup.
  • Place the grated cucumber in a fine-mesh strainer and press the water out. Transfer the cucumber to paper towels and squeeze out the remaining water. You want to try to remove as much of the water as possible so your Tzatziki won't be runny.
  • Stir the grated cucumber and non-dairy together. Add the garlic, lemon juice, chopped dill and season with salt and pepper.
