Easy Vegan Pasta Salad

This easy vegan pasta salad is a colorful and flavorful dish that is perfect for a quick and healthy meal. It is made with cooked bowtie pasta, tossed with a variety of fresh veggies such as cherry tomatoes, yellow bell peppers, and red onions. For added flavor and texture, you can also mix in some black olives, chickpeas or dairy-free mozarella.

The dressing is a simple mix of olive oil, lemon juice, garlic, Dijon mustard and dried herbs such as basil, oregano or thyme. This dressing adds a zesty and tangy flavor to the salad.

Ingredients needed:

10 oz. bowtie pasta (you can substitute gluten-free pasta)
1 1/2 cups cherry tomatoes, halved
1 yellow bell pepper, diced
1/4 red onion, sliced
1/4 cup fresh parsley, chopped
Garnish: Vegan mozzarella cut into small cubes

For the dressing:
1/4 cup olive oil
2 tbsp lemon juice
1 garlic clove, minced
1 tsp Dijon mustard
1/2 tsp Italian seasoning
salt and pepper, to taste

Easy Vegan Pasta Salad

Directions:

Cook pasta according to package instructions. Drain and rinse with cold water to stop cooking.

In a large mixing bowl, combine pasta with cherry tomatoes, cucumber, bell pepper, red onion, and chopped fresh parsley.

In a small mixing bowl, whisk together olive oil, lemon juice, garlic, Dijon mustard, dried basil, salt, and pepper.

Pour the dressing over the pasta salad and toss to combine.

Sprinkle fresh parsley over the top of the salad.

This easy vegan pasta salad is now ready to enjoy. You can also add or substitute any vegetables or herbs that you like to make it your own.
