Easy Vegan Eggnog Waffles

These waffles are ideal for Christmas morning breakfast, but they’re also easy enough to make any day of the week.

Easy Vegan Eggnog Waffles

Ingredients needed:

1 3/4 cups Vegan eggnog (I like Chobani Oat Nog)

2 tbsp vegetable oil

2 tbsp chia seeds

1 1/2 tsp pure vanilla extract

1 1/2 cups all-purpose flour

2 tsp cinnamon

3/4 tsp nutmeg

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

Directions:

Add the vegan eggnog, chia seeds, vegetable oil and use vanilla extract to a mixing bowl. Stir until combined and let set for 5 minutes.

Add the all-purpose flour, cinnamon, nutmeg, baking powder, baking soda and salt and stir until combined, making sure that there are no clumps.

Easy Vegan Eggnog Waffles

Grease a waffle iron (I used a mini one) and let it heat up. If using a mini waffle iron add 1/3 cup of batter. Cook until golden brown. Top with maple syrup and dairy-free whipped cream.
