Baked oats is a recipe that quickly went viral on TikTok. It’s no surprise why- it’s absolutely delicious and so easy to make! This Easy Vegan Apple Walnut Baked Oatmeal prepares in minutes and you can mix in your favorite fruit and nuts. I chose apples and walnuts but blueberries, strawberries, and sliced almonds or pecans are also a great combination.
What’s the difference between Rolled Oats and Quick Oats?
This recipe calls for rolled oats which are different than quick oats. If you’re making a bowl of oatmeal, then rolled oats and quick oats are interchangeable. However, rolled oats are better for baking and cooking because they retain their texture better than quick oats. This makes them the ideal addition to baked goods like this baked oatmeal.
Easy Vegan Apple Walnut Baked Oatmeal
This easy breakfast is full of flavor and a good source of fiber. Add almond butter or peanut butter for extra protein.
Ingredients:
1 large ripe banana (or use 1/2 cup of applesauce)
1 1/2 cups rolled oats (oats are naturally gluten-free)
1 cup unsweetened almond milk
1 teaspoon pure vanilla extract
1 teaspoon baking powder
1 tsp cinnamon or apple pie spice or allspice
1 tbsp brown sugar
1/2 cup chopped walnuts
1 apple, diced (Granny Smith or Gala are good choices)

Preheat the oven to 350 degrees. Grease a loaf pan. You can also make this oatmeal in a 6×6 baking dish.
Add the banana, rolled oats, almond milk, cinnamon, baking powder, and pure vanilla extract to a blender or food processor. Mix until the ingredients are combined.
Pour the mixture into the loaf pan and add the walnuts and diced apple. Sprinkle the top with brown sugar. Add an additional tablespoon of brown sugar if you like your oatmeal on the sweeter side.

Bake for 25 minutes. Let cool slightly and enjoy!
