Get a nutritious, warming dinner on the table in no time with this easy chili mac recipe. Mac and cheese is a timeless comfort food. It’s made even better with the addition of elbow macaroni and a generous helping of vegan cheese. This kid-friendly dish is ready in less then 30 minutes and there’s plenty leftover for the next day.
Easy One Pot Vegan Chili Mac

Ingredients:
2-3 tbsp Olive oil
1 yellow onion, diced
5 garlic cloves, minced
2 tsp cumin
1 tsp smoked paprika
4 cups vegetable broth
1 15 oz can kidney beans
1 15 oz can fire roasted tomatoes
1 15 oz can corn
3 tbsp tomato paste
12 oz elbow macaroni
Serve with shredded vegan cheddar cheese, sour cream, lime wedges
Directions:
In a large soup pot, heat the olive oil over medium heat. Once the oil is hot , add the onions and cook for 2-3 minutes. Stir in the garlic, smoked paprika and cumin and cook for an additional 2 minutes.

Pour in the vegetable broth, kidney beans, corn, fire roasted diced tomatoes, tomato paste and pasta. Stir until combined. Bring the pot to a boil and then reduce the heat to low/medium. Cover the pot and cook for 10 minutes or until the pasta is done.

If you are using vegan cheese, add it to the top of the chili mac and cover the pot. Let the pot sit for a few minutes so the cheese will melt.
Serve with vegan sour cream and lime wedges.
