Making your own pizza dough can seem intimidating, but it’s actually quite simple! The most important step is mixing the yeast. If the yeast isn’t activated correctly, your dough won’t rise and instead of a fluffy, soft crust it will be dense. I included some tips below for activiting the yeast perfect every time.

  • All-purpose flour
  • Packet Active Dry Yeast
  • Sugar
  • Salt
  • Water
  • Olive oil

Mix the yeast, water, and sugar in a large bowl. The ideal water temperature for yeast is 110 to 115. Many bakers will use their finger to test the temperature. This has never worked for me! I’ve found that the easiest way to achieve perfect water temperature every time is to use a candy thermometer. Water temperature is very important. If the water is too hot, it will kill the yeast and it won’t rise.

After 10 minutes, the yeast should be frothy. If your mixture didn’t froth, the yeast packet may be old or the water might have been too hot/cold and you should try again.

Add the olive oil, salt and flour and stir until the texture is shaggy.

Knead the dough for 5-10 minutes until it is smooth. Form it into a ball. Oil a large bowl and place the ball of dough inside. Cover with a kitchen towel and leave for 60 minutes. If it’s warm in your kitchen, you can let the dough rise on your countertop. If it’s cool, you place the bowl in the oven (no heat) with only the oven light on.

After 60 minutes the dough will have doubled in size. Knead it a few more times. At this point you can store it in the refridgerator (tightly wrapped in cling wrap) or you can go ahead and make your pizza!

For making pizza: Roll out the dough on a lightly floured surface.

Sprinkle the pizza pan or pizza stone with flour to prevent sticking. Brush the top of the dough with olive oil (approximately 2 tablespoons) and poke holes all over using a fork. This will prevent the dough from bubbling up.

Bake the dough at 425 degrees for 6-8 minutes or until the bottom has begun to brown. Remove from the oven and add your toppings. Bake for an additional 10-12 minutes or until the crust is golden and the toppings are cooked.
