Best Vegan Peach Cobbler
Best Vegan Peach Cobbler- take advantage of in-season peaches to create this summertime favorite. Only 15 minutes to prep!

The farmer’s market has plenty of fragrant peaches in stock so I couldn’t resist buying them. My go-to peach dish is this Grilled Peach and Corn Quinoa Salad but this time I decided to make an easy cobbler.
This Vegan Peach Cobbler is easy to make and the recipe is totally foolproof. Just slice the peaches, top with the flour and vegan butter mixture, and bake. No one will ever be able to tell that it’s vegan!
The best peaches to use are the ones that are ripe enough to eat. Too ripe and the dish will be mushy. Too firm and the dish will lack the natural sweetness. I would definitelt recommend using fresh peach over canned ones, but if you choose to use canned make sure that all the water/syrup is drained.
Best Vegan Peach Cobbler
Ingredients:
Peaches
Sugar
Cornstarch
Vegan butter
Pure vanilla extract
All-purpose flour
Baking powder
Salt

Start by greasing a 9 x 9 inch baking dish. Slice your peaches and arrange them in the dish. You can leave the skin on or remove it as I did. Sprinkle the sugar and cornstarch on top and then toss until combined.

Mix the melted vegan butter, sugar, pure vanilla extract, flour, baking powder, and salt in a bowl. The consistency should resemble frosting. Spread the mixture on top of the peaches.

Bake at 400 degrees Fahrenheit for 30-35 minutes or until the sides are browned and the peaches are bubbling. Let it cool and then serve with a scoop of ice cream.
Can this be made in advance?
I wouldn’t recommend it. This dessert tastes best made the day of and enjoyed as soon as it cools.
