Ever since I got my new grill, I’ve been on an outdoor-cooking spree!
Skewers are one of my favorite things to grill. They can be customized in many different ways and they’re great for gatherings. These veggie skewers contain a rainbow of nutrient-dense goodness. The finishing touch is a glaze made with agave and balsamic vinegar. These skewers are so good even my 5-year-old will eat them!

Best Rainbow Vegetable Skewers
Ingredients needed for these Rainbow Veggie Skewers:
- 1 Small eggplant (sliced and cut into fourths)
- 1/2 Red onion (cut into 1-2 inch sections)
- 1 Zucchini (sliced)
- 1 Yellow squash (sliced)
- 1 Orange pepper (cut into 1-2 inch sections)
- 10 Cherry tomatoes
For the Agave Balsamic Glaze:
- 3/4 cup agave
- 1/4 cup balsamic vinegar
- 1 teaspoon powdered garlic
- 1 teaspoon powdered onion
- Salt and pepper to taste

Turn the grill to medium-high heat. Sprinkle on salt and pepper on the skewers. Place 3 pieces of each veggie on the skewers.
Spray with cooking oil and cook for 5 minutes. Flip over and cook an additional 5 minutes on the other side.
For the Agave Balsamic Glaze- whisk the ingredients together in a small bowl. Pour over or dip the skewers into the glaze after grilling.


A few tips for grilling perfect veggie skewers:
Spray the skewers with oil before placing on the grill so they won’t stick.
Make sure the veggies are a similar thickness so they cook evenly.
Finally, use tongs to remove from the grill. The sticks get very hot!
