Is there anything better than a warm cinnamon roll on a cold morning? These vegan cinnamon rolls are not only a delicious treat, they can be made in an hour! Many cinnamon rolls recipes must be made the night before, but not this one! It requires a mere 30 minutes of prep time and 30 minutes to bake. The end result is fluffy, sticky, and absolutely delicious!
Many new bakers are wary of using yeast because it can be fickle. If the water you mix the yeast with is too hot, it will kill the yeast. If the water is too cold, the yeast will not activate and rise. In both cases, you’re left with dense, flat baked goods. The ideal water temperature for yeast to activate is 110 to 115 degrees. Many bakers will tell you to use your finger to test the temperature. This has never worked for me! I’ve found that the easiest way to achieve perfect water temperature every time is to use a candy thermometer. Once I started using a candy thermometer, my yeast turned out perfect every time.
Best Easy Vegan Cinnamon Rolls
Ingredients needed:
Almond milk
Pure cane sugar
Quick rise yeast
Vegan butter
Salt
All-purpose flour
Brown sugar
Ground cinnamon
Powdered sugar

Heat the almond milk in the microwave until it is 110 to 115 degrees. Add it to a large bowl and pour in the yeast and the pure cane sugar. Let it sit for approximately 5 minutes until the mixture gets frothy on top.
Add the melted vegan butter all-purpose flour and salt to the mixture. Stir until well combined. If the mixture seems too wet, add additional flour 1/4 cup at a time. The mixture should be shaggy and a little sticky.

Transfer the dough to a lightly floured surface and knead for 5 minutes until it is smooth. Place the dough back in the bowl, cover it with a towel and let it sit for 20 minutes in a warm location. If it’s chilly in your house, you can place the dough in the oven with only the oven light on (no heat).

Preheat the oven to 375 degrees. Grease 2 8×8 baking dishes.
Transfer the dough to a lightly floured surface and press it down a few times. Using a rolling pin, roll the dough out into a large rectangle. It should be approximately 1/2 inch thick. I used a sharp knife to trim the sides so it was a more uniform rectangle shape.
Spread the melted vegan butter on top and sprinkle with the brown sugar and cinnamon mixture.
Starting with the long side facing you, roll the rectangle into a log. Place it with the seam on the bottom. Using a sharp knife, cut the log into 12 pieces. Place 6 rolls in each baking dish and bake for 30 minutes or until light golden brown.

How to make the icing:
In a small bowl, whisk together the powdered sugar and almond milk until well combined. Drizzle on top of the rolls and enjoy!
