5 Minute Vegan Pesto
5 Minute Vegan Pesto- one of the best ways to enjoy fresh basil from the garden! 5 Minutes to prepare and only 7 ingredients.

This time of year my garden is adundant with basil, so I decied to whip up some pesto. Pesto is often thought of as a pasta sauce, but it has endless possibilities! Some of my favorite ways to enjoy pesto are:
As a dip for roasted/grilled vegetables
As a substitute for pizza sauce
Spread on freshly baked bread
As pesto butter- mix two parts softened vegan butter to one part pesto. Add to rice or mashed potatoes.
Traditional pesto is made with Parmesan or Romano cheese. If you’re not familar with nutritional yeast, it’s a nutty/cheesy tasting powder. It’s gluten, soy and sugar free and it is high in protein, vitamin b12 and folic acid. It’s a great way to add extra protein, vitamins, minerals, and antioxidants to vegan food. I consider it to be a must-have in very vegan’s pantry!
5 Minute Vegan Pesto
Ingredients:
Fresh basil
Pine nuts
Nutritional yeast
Fresh squeezed lemon juice
Garlic
Olive oil
Salt & pepper

Add the fresh basil, pine nuts, nutritional yeast, lemon juice, minced garlic and olive oil to a food processor. Mix until combined. If the mixture is too thick, you can add water one tablespoon at a time.

Season with salt and pepper and serve.

5 Minute Vegan Pesto
Ingredients
- 2 Cups Fresh Basil leaves (packed)
- 3 Tbsp Pine nuts
- 2 Garlic cloves
- 1/4 Cup Olive oil
- 1 1/2 Tbsp Fresh squeezed lemon juice
- 4 Tbsp nutritional yeast
- Salt & pepper
Instructions
- Add all ingredients to the food processor and mix until combined. It the mixture is too thick you can add water one tablespoon at a time.
