Easy Vegan Peach Cobbler

  • 5-6 Large peaches
  • 1/2 Cup Sugar
  • 1 1/2 Tbsp Cornstarch

For the topping:

  • 1/2 Cup Vegan butter, melted
  • 1/2 Cup Sugar
  • 1 Cup All purpose flour
  • 1 Tsp Pure vanilla extract
  • 1 Tsp Baking powder
  • 1/4 Tsp Salt


  • Start by greasing a 9 x 9 inch baking dish. Slice your peaches and arrange them in the dish. You can leave the skin on or remove it as I did. Sprinkle the sugar and cornstarch on top and then toss until combined.
  • Mix the melted vegan butter, sugar, pure vanilla extract, flour, baking powder, and salt in a bowl. The consistency should resemble frosting. Spread the mixture on top of the peaches.
  • Bake at 400 degrees Fahrenheit for 30-35 minutes or until the sides are browned and the peaches are bubbling. Let it cool and then serve with a scoop of ice cream.
