Easy and Amazing Vegan Banana Bread
Banana bread that so good, you won't even know it's Vegan!
- 5 over ripe bananas
- 1/3 cup organic sugar
- 1/3 cup brown sugar
- 1/3 cup coconut oil
- 1 tsp pure vanilla extract
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp salt
- 1 1/2 tsp ground cinnamon
- 1 cup vegan chocolate chips or chopped walnuts (optional)
Preheat oven to 350 degrees. Grease a 9-inch loaf pan.
Peel 3 bananas and add them to a large mixing bowl. Mash them thoroughly using a fork or potato masher. Add the sugars, oil, and vanilla and stir together until combined.
Pour mixture into loaf pan. It will be thick. Smooth the top with the back of a spoon. Cook for 50 minutes or until a toothpick inserted in the center comes out clean.
Let thoroughly cool before cutting.
