Vegan White Bean Quinoa Stew
Ingredients:
2-3 tbsp olive oil
1 small yellow onion, diced
2 large carrots, chopped
3 celery stalks, chopped
3 cloves garlic, minced
2 tsp Italian seasoning
1 can fire-roasted diced tomatoes
6-7 cups vegetable broth
2 15.5 oz can Cannellini beans, drained and rinsed
3/4 cup dry quinoa
3 handfuls of kale, de-stemmed
Directions:
In a large pot, heat olive oil over medium heat. Add onion, celery stalks and carrots and cook for about 5 minutes.
Add the Italian season and minced garlic cloves and cook for another minute.

Pour in vegetable broth, fire-roasted diced tomatoes, 2 cans of drained and rinsed Cannellini beans and quinoa, and bring to a boil. Reduce heat to a simmer and let cook for about 15 minutes, or until quinoa is tender.
Add in the kale and stir until it wilts. Remove the soup from the heat and serve with your favorite bakery bread.
