Vegan Sweet Potato Waffles

Vegan Sweet Potato Waffles

Ingredients needed:

1/2 cup cooked sweet potato, packed
1 1/4 cup almond milk
1 tsp pure vanilla extract
1 tsp apple cider vinegar
3 tbsp vegan butter, melted
1 1/2 cups all-purpose flour
1 tbsp ground cinnamon
2 tbsp brown sugar
1 tbsp baking powder
1/4 tsp salt
1 tsp cinnamon

Directions:

Add the cooked sweet potato, almond milk, melted vegan butter, pure vanilla extract and apple cider vinegar to a food processor, or blender. Process until smooth.

In a large mixing bowl whisk together the all-purpose flour, brown sugar, ground flaxseed, baking powder, salt and cinnamon.

Add the sweet potato mixture and stir until combined.

Spoon the batter onto the greased waffle iron and cook according to the iron’s instructions.

Serve with vegan butter, maple syrup and a side of fresh fruit.
