Vegan Strawberry Chocolate Chip Cookies
Vegan Strawberry Chocolate Chip Cookies- chocolate covered strawberries in cookie form! These cookies are loaded with sweet strawberries and gooey chocolate chips.

This recipe uses a combination of freeze dried strawberries and fresh strawberries. The freeze dried strawberries are incorporated into the dough and the fresh strawberries are added to the tops of the cookies before baking.
Vegan Strawberry Chocolate Chip Cookies
Ingredients needed:
3/4 cup Vegan butter (Mikonos is my go-to brand for baking)
2 1/4 cups All-purpose flour
1/4 Cup + 3 tbsp Almond milk
1 Cup Brown sugar
1/4 Cup Pure cane sugar
1 tsp Salt
1 tsp Baking soda
2 tsp Cornstarch
2 tsp Pure vanilla extract
3/4 Cup dairy-free Chocolate chips
1 cup freeze dried strawberries
Directions:
Preheat the oven to 350° degrees Fahrenheit. Line a baking sheets with parchment paper and set it aside.
In a medium-sized mixing bowl, whisk the flour, baking soda, salt, and cornstarch together.
Using a stand mixer or a hand mixer, beat the vegan butter, almond milk, sugars, and vanilla together until they are creamy. Add the dry ingredients to the bowl and mix until combined. Fold in the chocolate chips and freeze dried strawberries.
Refrigerate the dough for at least one hour. Take approximately 1 1/2 tablespoons of dough and roll it into a ball. Place it on the parchment paper and gently flatten with the palm of your hand. Top with fresh strawberry slices and extra chocolate chips. Bake for 12 minutes or until the bottoms are golden brown. The cookies will seem soft when you take them out of the oven. They will firm up as they cool.
