This Strawberry Cheesecake Nice Cream combines the decadent flavor of strawberry cheesecake without the added calories, fat, and sugar. The creamy taste comes from cashew butter instead of cream cheese. This gluten-free treat is perfect anytime!
What is Nice Cream?
Nice cream is a dairy-free dessert that’s made by blending chunks of frozen fruit in a food processor or high-speed blender. This vegan take on ice cream is rich and creamy. Unlike traditional ice cream, nice cream isn’t loaded with saturated fat and sugar. Nice cream also requires much less prep time than ice cream and you don’t need an ice cream maker.
Nice cream can be customized in many different ways. This version combines strawberries, bananas, and cashew butter to mimic the taste of strawberry cheesecake without being heavy or overly sweet.
How to Make Vegan Strawberry Nice Cream
Ingredients
4 frozen bananas (make sure you use ripe bananas)
2 cups Frozen Strawberries
1/3 cup Cashew butter (if you can’t find cashew butter you can also use soaked cashews)
1 tsp Pure vanilla extract

Add all the ingredients to a high-powered blender or a food processor. Blend until smooth. The consistency may seem a little thin, but it will firm up in the freezer. If you would prefer the nice cream to be sweeter, you can add a tablespoon or two of maple syrup.

Transfer the nice cream mixture to a freezer-safe bowl and freeze for 2 hours or until firm. Serve and enjoy! My favorite way to serve nice cream is in hollowed-out fruit bowls like dragonfruit, melon, or pineapple.
Store leftovers in the freezer in an airtight container.
