What are Red Lentils?
Red lentils are a quick-cooking legume with a mild, subtly sweet flavor. They break down while cooking, which makes them perfect for savory dishes.. You can use red lentils in soups, stews, curries and even dips. Lentils also taste great on their own or mixed with roasted veggies.
This red lentil curry makes a generous portion, so it’s ideal for leftovers and for meal prep!
Vegan Red Lentil Coconut Curry
Ingredients needed:
(approximately) 3 tbsp olive oil
2 tbsp grated fresh ginger
1 1/2 tsp cumin
1 small yellow onion, diced
5 cloves garlic, minced
1 cup red lentils (dry)
2 cups low-sodium vegetable broth
1 15 oz can coconut milk
1 15 oz can diced tomatoes
1 15 oz can chickpeas
Salt and pepper to taste
Directions:
Heat the olive oil in a large pan over medium heat. Add the onion and cook for 3-5 minutes until translucent. Add the garlic and ginger and cook for 1-2 minutes.
Pour in the low sodium vegetable broth. Add the lentils and crushed tomatoes and stir well. Bring to a boil and then reduce to a simmer. Add the chickpeas and coconut milk and simmer for an additional 10 minutes, or until the lentils are throughly cooked.
Serve with rice, vegan flatbread and enjoy!

- salt and pepper to taste
