These Vegan raspberry brownies are a delicious version of the classic chocolate brownie. They are made without any animal products, making them suitable for vegans and those with dairy allergies. These brownies typically include ingredients such as flour, cocoa powder, sugar, non-dairy milk, and raspberries. They are often moist, rich, and chocolatey, with a subtle fruity flavor from the raspberries. They can be served warm with a scoop of vegan ice cream for a decadent treat.
Vegan Raspberry Brownies

Ingredients needed:
1 1/2 tbsp ground flaxseeds
1/2 cup vegan butter, melted
1/2 cup granulated sugar
1/2 cup brown sugar
1 tsp pure vanilla extract
1 1/2 cups all-purpose flour
1/2 cup Dutch process cocoa powder
1/4 tsp salt
1 tsp baking soda
3/4 cup raspberries (fresh)
1/2 cup dairy-free chocolate chips (plus more to sprinkle on top)
Directions:
In a small bowl, stir together the flaxseed with 3 tbsp water. Set aside to thicken.
Preheat the oven to 350 degrees Farhenheit. Line a 9×9 baking dish with parchment paper.
Melt the vegan butter in the microwave. In a medium-sized mixing bowl, add the melted butter brown and granulated sugar. Pour in the flaxseed mixture and pure vanilla extract. Stir until combined. Add the all-purpose flour, Dutch process cocoa powder, baking soda and salt and stir until combined.
Fold in the dairy-free chocolate chips and fresh raspberries.

Scoop the batter into the parchment-lined dish. Smooth out with a spatula. Top with extra raspberries and chocolate chips. Bake for 35-40 minutes. The brownies may not look done, but they will firm up as they cool. Remove the brownies from the oven and let them cool in the dish for 20 minutes. Then remove them by lifting up the parchment paper and let them cool an additional 30 minutes before serving.
