These pumpkin oatmeal bars are a tasty gluten-free breakfast or snack that’s flavored with pumpkin pie spice and pure maple syrup. Easy, healthy and delicious!
Vegan Pumpkin Oatmeal Breakfast Bars

Ingredients:
3 cups rolled oats or old fashioned oats (not quick oats)
1 cup canned pumpkin
1 tsp baking powder
1/2 tsp salt
1 1/2 tsp pumpkin pie spice
1/3 cup Brown sugar
1/3 cup applesauce
1/3 cup coconut oil (melted)
1/4 cup Maple syrup
1 1/2 tsp pure vanilla extract
1/2 cup chopped walnuts (optional)
Directions:
Preheat the oven to 350 degrees Fahrenheit. Grease an 8 x 8 inch baking dish.
Add the rolled oats to a food processor and process for 10 seconds. It’s ok if there are still some larger pieces of oats.

Pour the oats into a large mixing bowl. Add the canned pumpkin, brown sugar, maple syrup, applesauce, baking powder, salt, pumpkin pie spice, melted coconut oil and pure vanilla extra. Stir until combined.
Fold in the chopped walnuts.

Scoop the mixture into the greased baking dish. Press it down and smooth it out with a spatula. Bake for 25 minutes or until the edges are slightly browned. Let the baking dish cool for 45 minutes before cutting the bars.
