Vegan Peanut Butter Banana Baked Oatmeal

Ingredients needed:

2 overripe bananas, mashed (plus more banana slices to line the top of the oatmeal)
1 tbsp ground flaxseed
1 1/2 cups almond milk
2 tsp vanilla extract
2 tsp cinnamon
2 1/4 cups rolled oats
1/4 cup creamy peanut butter
1 tsp baking powder
1/4 tsp salt

Directions:

Preheat your oven to 375°F (190°C). Grease a 9-inch baking dish with cooking spray.

In a large mixing bowl, combine the rolled oats, baking powder, ground flaxseed, salt, and cinnamon. Add the almond milk, mashed bananas, peanut butter, and vanilla extract and stir until combined.

Vegan Peanut Butter Banana Baked Oatmeal

Pour the mixture into the prepared baking dish and smooth the top with a spatula. Line the top with slices of bananas. Optional- sprinkle brown sugar on the top.

Bake for 30-35 minutes, or until the top is golden brown and the oatmeal is set. Remove the baked oatmeal from the oven and allow it to cool for 5-10 minutes before slicing and serving.
