What is the difference between quick oats and rolled oats?

The main difference between quick oats and rolled oats lies in their processing methods and resulting texture. Rolled oats, also known as old-fashioned oats, are made by steaming oat groats and then rolling them into flat flakes. This process preserves the natural texture and flavor of the oats, resulting in a chewier and heartier texture when cooked.

On the other hand, quick oats, also referred to as instant oats or one-minute oats, undergo further processing. They are pre-cooked, then rolled thinner than rolled oats. This additional processing allows quick oats to cook faster and absorb liquids more rapidly. As a result, they have a softer and more tender texture when compared to rolled oats.

Due to the differences in texture, quick oats are often preferred for recipes where a smoother consistency is desired, such as in baking or making oatmeal porridge. Rolled oats, with their chewier texture, are commonly used in recipes like granola bars, cookies, or overnight oats where a heartier texture is desired.

Vegan Mixed Berry Oatmeal Bars

Ingredients:
1 1/2 cups all-purpose flour
1 cup rolled oats
1/4 cup granulated sugar
3/4 cup vegan butter, melted
For the filling:
4 cups fresh berries (I used strawberries, blueberries and raspberries)
1 tbsp freshly squeezed lemon juice
1/2 cup granulated sugar
3 tbsp cornstarch

Directions:

Preheat the oven to 350 degrees and line an 8 inch baking dish with parchment paper.

In a large mixing bowl, combine the all-purpose flour, rolled oats, 1/4 cup of sugar and melted vegan butter. Stir together to combine.

Set aside 1 cup of the rolled oat mixture. This will be used as the topping. Scoop the rest of the rolled oat mixture into the lined baking dish. Press it down using a spatula.

Bake the rolled oat crust for 12 minutes.

Vegan Mixed Berry Oatmeal Bars

While the crust is baking, prepare the mixed berry filling. Add the berries to a medium saucepan, along with the 1/2 cup granulated sugar, cornstarch and freshly-squeezed lemon juice. Cook on medium-high (stirring frequently) until the berry mixture begins to bubble. Reduce heat to medium and let simmer for 5 minutes or until the mixture thickens. Stir frequently so the mixture doesn’t stick to the bottom of the pan.

Vegan Mixed Berry Oatmeal Bars

Remove the berry mixture from the stove and pour it into the baking dish. Tear the reserve rolled oat mixture into small pieces and sprinkle on top of the berries.

Bake for 35 minutes on until the berries are bubbling and the topping is slightly browned. Remove from heat and let cool throughly before slicing.
