This Vegan white bean and kale soup is a hearty, plant-based soup made with a variety of seasonal vegetables such as root vegetables (onions, carrots), white beans, and kale. It is seasoned with herbs and spices such as garlic, and thyme. The soup is made by cooking the vegetables and beans in a vegetable broth and then blending half the mixture to give the soup a smooth, giving it a creamy texture. Vegan Kale and White Bean Soup

Ingredients needed:
2-3 tbsp olive oil
1 yellow onion, diced
2 carrots, sliced into thin sections
2 celery stalks, sliced into small sections
4 garlic cloves, minced
1 tsp fresh thyme leaves
2, 15.5 oz cans small white beans, drained and rinsed
5 cups vegetable broth
salt and pepper to taste
5 cups kale (remove stems)
Lemon wedge (to squeeze on top of soup)
Directions:
In a large pot over medium heat, add the olive oil, garlic cloves, onion, thyme, carrots and celery. Cook for 6-8 minutes, stirring frequently until the onions are soft and translucent.
Add the beans and vegetable broth and simmer for 15 minutes, stirring occasionally.

Transfer half of the soup into a high-speed blender (or use an immersion blender) and process until smooth. Add the mixture back into the pot and add the kale. Cook, stirring frequently until the kale is wilted, approximately 3 minutes. Squeeze fresh lemon on top and serve with your favorite bakery bread.
