1 tbsp olive oil
Salt and pepper
2 tbsp Za’atar seasoning
1/2 red onion, sliced
1 tomato, sliced
1/2 cucumber, sliced
1/2 cup fresh parsley, chopped
Approximately 1 1/2 cups hummus

Directions:

  2. Wash the eggplant and trim off the stem. Cut the eggplant into 1/2 inch thick slices.
  3. Sprinkle a little salt on both sides of the eggplant slices and let them sit for about 15-20 minutes. This step helps draw out excess moisture and improves the overall texture. Rinse off the salt and pat dry with a paper towel before grilling.
Vegan Grilled Eggplant Gyros
  1. In a small bowl, mix together the olive oil, Za’atar seasoning and pepper. Brush both sides of the eggplant slices with the mixture.
