These muffins are healthier than traditional muffins. All-purpose flour is substituted for almond flour and the amount of oil is reduced thanks to the addition of applesauce.
Vegan Gluten-Free Apple Walnut Muffins

Ingredients:
2 cups almond flour
1/2 cup rolled oats
1 teaspoon cinnamon
1 tsp baking powder
1/4 tsp salt
1/2 cup applesauce
1/4 cup maple syrup
1/4 cup almond milk
1/4 cup melted coconut oil
1 Apple cut into small sections
1/2 Cup chopped walnuts
Instructions:

Preheat the oven to 350 degrees and place 9 liners in a muffin pan. In a medium bowl, add the dry ingredients (almond flour, rolled oats, cinnamon, baking powder and salt) and whisk until combined. Add the wet ingredients (applesauce, maple syrup, almond milk, and melted coconut oil) and stir until combined. Fold in the apple and the chopped walnuts.
Scoop the batter into the muffin tray and fill to the top. Bake for 20 minutes or until a toothpick inserted into the center comes out clean. Transfer to a cooling rack and cool throughly before serving.
If you’d like a little added sweetness, sprinkle some brown sugar on top.
