Vegan Fourth of July Sugar Cookie Bars

For the cookies:
3/4 cup vegan butter, room temperature
3/4 cup granulated sugar
1 3/4 cups all purpose flour
2 tbsp almond milk
1 1/2 tsp pure vanilla extract
1/2 tsp baking powder
1/4 tsp salt
For the frosting:
6 tbsp vegan butter, room temperature
2 cups powdered sugar
1-2 tbsp almond milk (may need depending on how thick the mixture is)
Also needed: Fourth of July sprinkles
Directions:
Preheat the oven to 375 degrees Fahrenheit and grease a 10 inch baking dish.
In the bowl of a stand mixer or in a large mixing bowl with hand mixer, beat the room temperature vegan butter and sugar until it is fluffy (approximately 3 minutes).
Add the almond milk and pure vanilla extract to the bowl. Beat on high until it is incorporated (approximately 1 minute).
Add the all-purpose flour, baking powder and salt to the mixture. Mix on medium speed until combined. Scrape down the sides to make sure all the ingredients are incorporated.

Scoop the batter into the greased pan and use a spatula to flatten it out.
Bake for 22-24 minutes. The top of the batter should be lightly browned. Remove from heat and let cool throughly before applying the frosting.

For the buttercream frosting:
In the bowl of a stand mixer or in a large mixing bowl with hand mixer, beat the butter until smooth. Add the powdered sugar one cup at a time and beat to combine.
Add the pure vanilla extract and beat on medium-high until combined. If the mixture is too dry, add 1 tsp of almond milk at a time. If it is too wet add more powdered sugar.

Spread the frosting on top of the cookie layer using a spatula. Top with Fourth of July sprinkles. Cut into bars and serve.
