Vegan Chocolate Cut Out Sugar Cookies- traditional cut out sugar cookies get an upgrade with the addition of Dutch cocoa powder.

Vegan Chocolate Cut Out Sugar Cookies

Ingredients needed:
1 1/2 cups all-purpose flour (spooned and leveled)
3/4 cup Dutch cocoa powder
1 tsp baking powder
1/4 tsp salt
3/4 cup vegan butter, softened
1 cup vegan white sugar
1 1/2 tsp pure vanilla extract
1 egg replacer (I use Bob’s Red Mill)
Directions:
In a medium-sized bowl, whisk the all-purpose flour, Dutch cocoa powder, baking powder, salt . Set it aside.
In a small bowl, whisk together 1 tbsp of egg replacer with 2 tablespoons water. (These are the directions for Bob’s Red Mill egg replacer. If you are using a different brand, read the directions on the back). Set it aside.

Using a stand mixer (or a hand mixer and large bowl), beat the vegan butter and sugar until light and fluffy- around 2 minutes. Add the egg replacer and pure vanilla extract and beat until combined. Scrape down the sides when needed. Add the all-purpose flour, Dutch cocoa powder, baking powder and beat until throughly combined.
Divide the dough in half. Roll each half of the dough into a ball. Wrap up with Saran Wrap and refrigerate it for 1-2 hours (longer is better).

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Take 1 dough ball out of the fridge and leave the other one in there while you work. Lightly dust your workspace and rolling pin with either flour or cocoa powder. Roll the dough out and cut the dough into shapes using cookie cutters. Repeat the rolling and cutting process with the second ball of dough. If at any time the dough becomes warm and difficult to work with, put it back into the refrigerator for 10-15 minutes.

Bake the cookies for 9-11 minutes or until the edges are set. (Baking time will depend on how thick your cookies are). Mine were on the thinner side, so I baked them for 9 minutes. Allow the cookies to cool for at least 5 minutes on the baking sheet. Transfer the cookies to a cooling rack and let cool throughly before decorating.
