Vegan Chocolate Chunk Cookie Bars

Ingredients:
1 tbsp egg replacer ( I use Bob’s Red Mill)
2 tbsp water
3/4 cup melted vegan butter
2 tsp pure vanilla extract
1/2 cup brown sugar (lightly packed)
1/2 cup granulated sugar
2 1/4 cups all-purpose flour
1 tbsp cornstarch
1 tsp baking soda
1/2 tsp salt
3/4 cup dairy-free chocolate chunks (plus more to add to the top)

Directions:

Preheat the oven to 350 degrees and line a 8 inch baking dish with parchment paper.

In a small bowl, combine the egg replacer with water. Stir to combine and set aside for a few minutes.

In a medium-sized mixing bowl, whisk together the melted vegan butter, brown sugar, white sugar and pure vanilla extract. Then, stir in the egg replacer.

Add the all-purpose flour, cornstarch, baking soda and salt to the sugar mixture and stir until combined. Dough will be thick.

Fold in the 3/4 cup of vegan chocolate chips. Scoop the dough into the lined baking sheet and press down using a spatula. Add more chocolate chips to the top.

Bake for 30-32 minutes or until the edges are golden brown. Remove from the oven and let the cookie bars cool in the baking side for 20 minutes. Lift them out of the baking dish using the parchment paper and let cool for an additional 15 minutes. Cut and enjoy!
