1/4 cup coconut oil, melted
1/3 cup almond milk
1 tbsp ground flaxseed
1 1/2 tsp pure vanilla extract
1 cup white granulated sugar
1 1/4 cups grated zucchini
1 1/2 cups all-purpose flour
2 tsp cinnamon
1 1/2 tsp baking powder
1/2 tsp salt
1 cup vegan chocolate chunks
1/2 cup chopped walnuts
Directions:
Preheat the oven to 350 degrees Fahrenheit and grease a loaf pan.
In a medium mixing bowl, combine the melted coconut oil, almond milk, ground flaxseed pure vanilla extract and granulated sugar.
Grate the zucchini and remove some of the moisture by blotting it with a paper towel. Add the zucchini to the mixture and stir to incorporate.

Add the all-purpose flour, cinnamon, baking powder and salt and stir until just combined. Be careful not to over-mix.
Scoop the mixture into the greased loaf pan and smooth out the top using the back of a spoon.
Bake for 45-50 minutes of until a toothpick inserted into the center comes out clean. Let cool throughly before serving.
