How to make chickpea flour:
Like most speciality flour, chickpea flour can be expensive when purchased in a grocery store. Luckily, it’s easy to make using an inexpensive bag of dry chickpeas!
- Start with dry chickpeas.
- Rinse the chickpeas thoroughly and remove any debris.
- Spread the chickpeas out on a clean towel or tray and allow them to air-dry completely. You want to make sure that they are completely dry before proceeding to the next step.
- Once the chickpeas are dry, add them to a high-speed blender or food processor. You may need to do this in batches if you have a small appliance.
- Pulse the chickpeas until they are ground into a fine powder. You may need to stop and scrape down the sides of the blender or food processor a few times to ensure that all of the chickpeas are ground evenly.
- Once the chickpeas are ground into a fine powder, sift the flour through a fine-mesh sieve. This will help remove any large pieces or lumps and ensure that your chickpea flour is smooth and fine.
- Store the chickpea flour in an airtight container in a cool, dry place until ready to use.

Vegan Chickpea Flour Omelette
Ingredients needed:
1 cup chickpea flour
1 1/4 cup water
1/2 tsp baking powder
1/4 tsp salt
1 tsp garlic powder
2 tbsp nutritional yeast
For the filling:
2 tbsp olive oil
1 red bell pepper, diced
1 yellow onion, diced
2 large handfuls baby spinach
optional- vegan Feta cheese
Directions:
Combine the chickpea flour, water, baking powder, salt, garlic powder and nutritional yeast in a bowl. Whisk until combined and set aside.
For the filling: Heat the olive oil in a skillet over medium heat.
Add the onion and red bell pepper skillet. Cook for about 5 minutes or until the vegetables are soft. Add the baby spinach and cook until it has wilted. Transfer the vegetables to a bowl and clean the skillet.
Grease the skillet with cooking spray. Add half of the chickpea flour mixture and use a spatula to create a large, circular shape.

Cook on low-medium heat for approximately 5-7 minutes until bubbles start to form at the top. Add the onion, red bell pepper and spinach mixture to half of the circle. Top with vegan cheese, if desired. Fold the omelette in half using a spatula and cook for an additional 2 minutes. Serve hot and enjoy!
