What are Red Lentils?
Red lentils, also known as Masoor dal, are a type of lentil that comes from a variety of Lens culinaris, a legume plant. They are small, lens-shaped legumes and are usually pink, red, or orange in color. Red lentils are one of the most commonly used lentils in cooking due to their quick cooking time and versatility in various dishes.

Vegan Carrot and Red Lentil Dip
2-3 tbsp olive oil
1 yellow onion
3 garlic cloves
1 tsp ground ginger
4 large carrots, sliced
2 tbsp tomato paste
2 cups red lentils
5 cups vegetable broth
For garnish: vegan plain yogurt, roasted chickpeas, bread or crackers for dipping
Add the oil to a large pot over medium heat. Add the diced onion, garlic and carrot slices and cook for 5-7 minutes. Stir frequently so it doesn’t burn. Add the ginger.
Add the tomato paste, red lentil and vegetable broth. Bring to a boil and then cover the pot and lower to a simmer. Simmer for 15 minutes or until the lentils are cooked and the carrots are tender.
Use an immersion blender or transfer the dip in batches to a high-powered blender to blend. Mix until smooth and creamy. Top with vegan plain yogurt and roasted chickpeas.
