Vegan Black Bean Quinoa Bake
Ingredients:
1 cup quinoa, uncooked
2 tbsp olive oil
1 small yellow onion, diced
3 cloves garlic, minced
2 bell peppers (red and yellow or orange), diced
1 can corn kernels
2, 15.5 oz black beans, drained and rinsed
2 cups enchilada sauce
10 oz shredded vegan mexican cheese
Juice from 1 lime
1/3 cup fresh cilantro, chopped
1 tsp cumin
Directions:
In a medium saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the quinoa is tender and the broth is absorbed.
While the quinoa is cooking, preheat the oven to 375°F. Grease a large casserole dish and set aside.
While the quinoa is cooking, heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté for 3-4 minutes, or until the onion is translucent. Add the bell peppers to the skillet and sauté for an additional 5 minutes, or until the peppers are tender.

Stir in the corn, cumin, lime juice, chopped cilantro. Cook for 2-3 minutes, or until heated through.

In a large bowl, combine the cooked quinoa, black beans, enchilada sauce and vegetable mixture. Add 1/2 of the vegan cheese. Stir until combined.

Scoop the quinoa mixture into the casserole dish and top with the rest of the shredded vegan cheese. Cover the pan with foil and bake for 15 minutes. Remove the foil and bake for an additional 10 minutes. Let it cool slightly before serving.
