Vegan Black Bean Mango Salad
Ingredients:
1, 15.5 oz can black beans, drained and rinsed
2 mangos, diced
1 cup cucumber, diced
1/2 red onion, diced
1 red bell pepper, diced
1 1/2 cups cherry tomatoes, halved
3 cups red cabbage, thinly sliced
1/4 cup fresh cilantro, chopped
1 avocado, diced
For the Sweet Lime Dressing:
Juice from 1 lime
1 tbsp agave
2 tbsp olive oil
Salt and pepper to taste

Directions:
In a medium saucepan, heat the olive oil over medium heat. Add the black beans. Cook 2 minutes until warmed through, stirring occasionally.

In a large bowl, mix together the black beans, diced mango, red bell pepper, red onion, red cabbage, diced cucumber, halved cherry tomatoes, chopped cilantro and diced avocado.
In a separate small bowl, whisk together the lime juice, agave, olive oil, salt, and pepper. Pour the dressing over the salad and toss everything together until it’s well combined.
Serve room temperature and enjoy!
