Vegan Banana Nut Muffins
Ingredients needed:
2 large overripe bananas (roughly 1 1/4 cups)
1/3 cup vegetable oil
1 cup almond milk
3/4 cup granulated sugar
1 tsp pure vanila extract
2 tsp apple cider vinegar
2 1/4 cups all-purpose flour
1 tbsp baking powder
1/2 tsp salt
3/4 cup chopped almonds
Directions:
Preheat your oven to 400°F. Line a muffin tin with paper liners and spray them with oil.
In a large mixing bowl, mash the ripe bananas using a fork or potato masher until mostly smooth.
Add the vegetable oil, almond milk, pure vanilla extract and apple cider vinegar to the mashed bananas. Mix well until the wet ingredients are combined.
Sprinkle the baking soda, salt, and granulated sugar over the wet ingredients. Mix everything together.
Add the all-purpose flour to the mixture and gently stir until just combined. Be careful not to overmix; a few lumps are okay. Fold the chopped walnuts into the batter.

Divide the batter evenly among the muffin cups, filling each about 3/4 full (approximately 1/4 cup of batter).
Bake in the preheated oven for about 22-24 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Once done, remove the muffins from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely.
