Vegan chickpea noodle soup is a hearty and nourishing plant-based soup that is made with chickpeas, vegetables, and noodles. It is a tasty and easy-to-make meal that is perfect for colder weather and can be customized with a variety of vegetables and seasonings to suit your taste.
This chickpea soup is hearty, delicious and packed with nutrients. Chickpeas are a rich source of vitamins, minerals, and fiber. It is also high in protein and makes an excellent replacement for meat in many vegan dishes. Carrots are rich in beta-carotene and high in Vitamin while celery is high in Vitamin A, Vitamin K and fiber.
One Pot Vegan Chickpea Noodle Soup

3 tbsp olive oil
1 medium yellow onion, chopped
3 stalks celery, sliced
2 large carrots, thinly sliced
1 can chickpeas, rinsed and drained
3 garlic cloves
salt and pepper
8 ounces spiral pasta
7 cups vegetable broth (add another cup if you like more liquid in your soup)
3 tablespoons chopped fresh parsely
lemon wedge for serving
Directions:

In a large pot over medium heat, add the olive oil, garlic cloves, onion and celery. Cook for 5-7 minutes, stirring frequently until the onions are soft and translucent.

Add the chickpeas, pasta, vegetable broth and fresh parsley.
Bring the pot to a boil and then reduce the heat to medium-low. Let it cook for an additional 10-12 minutes or until the pasta in tender. Season with salt and pepper and add a lemon wedge before serving.
