One Bowl Vegan Pumpkin Bread

Quick breads are so easy to make and they can be enjoyed for breakfast or a dessert. This pumpkin bread is sweet, warmly spiced and so soft.

One Bowl Vegan Pumpkin Bread

Ingredients:

1 tbsp Ground flaxseed

1 1/2 tbsp Water

1 15 oz can of pumpkin puree

1 1/4 cups Brown sugar

1/4 cup Almond Milk

1/2 cup Vegetable oil

1 3/4 All-purpose flour

1/2 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 1/2 tsp Cinnamon

1 tsp Pumpkin pie spice

Directions:

Preheat the oven to 350 degrees Fahrenheit and grease a loaf pan. In a large mixing bowl add the ground flaxseed with 1 1/2 tbsp water. Stir and wait 3 minutes for it to thicken.

Once the flaxseed has thickened, add the pumpkin puree brown sugar, vegetable oil and almond milk. Stir until combined.

Add the flour, baking soda, baking powder, salt, cinnamon and pumpkin pie spice to the wet ingredients and stir until combined. Be careful not to over-mix.

One Bowl Vegan Pumpkin Bread

Pour the batter in the greased loaf pan. Bake for 1 hour 15 minutes or until a toothpick in the center comes out clean. Let the loaf cool throughly before slicing. Serve with vegan butter and enjoy!

  • 1 tbsp ground flaxseed
  • 1 1/2 tbsp water
  • 1 15 oz can pumpkin puree
  • 1 1/4 cups brown sugar
