What is Orzo?

Orzo, also known as risoni, is a form of short-cut pasta, shaped like a large grain of rice. Orzo is traditionally made from flour, but it can also be made of whole grain. It is often made with semolina, a type of flour made from durum wheat.

Ingredients:

2 cups cooked lentils (use 3/4 cup dry lentils and cook according to the directions on the package)

1 cup orzo

1 Yellow (or red) bell pepper, diced

1 Small cucumber, chopped

1 Small red onion, diced

(Roughly) 2 cups cherry tomatoes, sliced in half

1/4 cup Fresh parsley, chopped

For the lemon dressing:

3 tbsp Olive oil

2 tbsp Fresh squeezed lemon juice

1 Garlic clove, minced

Salt and pepper to taste

Directions:

Cook the dry lentils according to the directions on the package.

To cook the orzo: Add the orzo and 2 cups of water to a medium pot. Bring to a low boil. Once it is boiling, reduce heat to low. Cover and let simmer until all of the liquid is absorbed, about 15 minutes.

While the orzo is cooking, place the chopped bell pepper on a baking sheet lined with parchment paper. Drizzle with olive oil and bake at 400 degrees Fahrenheit for 15 minutes.

Let the orzo and lentils cool. Add the roasted bell peppers, sliced cherry tomatoes, chopped red onions and fresh parsley.

In a small bowl, whisk together the olive oil, fresh squeezed lemon juice, garlic clove and salt and pepper for the dressing. Dress the salad and enjoy!
