Healthy Vegan Pumpkin Spice Blondies

These blondies are gooey, chewy, and absolutely delicious. Unlike traditional blondies, these are high in protein and in fiber. These are also nut-free and gluten-free.

These blondies only take 10 minutes to prep and they’re made with basic pantry ingredients.

Healthy Vegan Pumpkin Spice Blondies

Ingredients:

1 can chickpeas, drained and rinsed

3/4 cup rolled oats

1/4 cup maple syrup

1/4 cup almond butter

2 tsp pure vanilla extract

2 tbsp melted coconut oil

1 tbsp pumpkin pie spice

1 tsp baking powder

1/2 tsp salt

1/2 cup vegan dark chocolate chips

Directions:

Preheat the oven to 350 degrees Fahrenheit. Grease an 8X8 inch baking pan.

Add the chickpeas, maple syrup, rolled oats, pumpkin pie spice, almond butter, pure vanilla extract, oil, baking powder and salt together in a food processor or high speed blender.

Fold in the dairy-free chocolate chips.

Scoop the mixture into baking dish and smooth the surface with a spatula. Optional: add more chocolate chips to the top. Bake for 16-18 minutes or until a toothpick inserted into the center comes out clean. Let cool and then slice.
