These delicious, gooey brownies are packed with nutritious sweet potatoes. You can’t taste the sweet potatoes, but they give the brownies a soft, fudge-like texture.
Easy Vegan Sweet Potato Brownies

Ingredients:
1 1/3 cup (packed) Mashed sweet potatoes
1/4 Maple syrup
1/4 cup Vegetable oil
1/2 cup Almond flour
1/3 cup Pure cane sugar
1/2 cup All-purpose flour (you can also substitute 1:1 gluten-free flour)
1/3 cup Dutch process cocoa powder
1/2 cup Dairy-free vegan chocolate chips
Optional: 1/2 cup Chopped walnuts
Directions:
Preheat the oven to 350 degrees Fahrenheit and grease an 8×12 baking dish.
Peel sweet potatoes and cut them into small cubes. Add them to a medium-sized pot and fill with water. Bring to a boil and cook for approximately or until they are tender. Drain the water and set aside the sweet potatoes to cool.
Once they have cooled, puree them using a food processor. Add the maple syrup, vegetable oil, almond flour, all-purpose flour, are cane sugar and cocoa powder the food processor and mix until smooth. Fold in the vegan chocolate chips and (optional) chopped walnuts.

Pour the mixture into the baking dish and sprinkle some additional chocolate chips and walnuts on top. Bake for 35 minutes or until the top has solidified. Let cool throughly before cutting.
