What is Green Griller Zucchini?
For this recipe I used Green Griller Zucchini. Green Griller Zucchini is wider than traditional zucchini which makes it great for grilling, with broad slices that are easy to flip.
If you can’t find Green Griller, you can substitute regular zucchini for this recipe.

Easy Vegan Stuffed Zucchini
Ingredients:
2 green griller zucchini
2 tbsp olive oil
1 glove garlic
1/2 red onion, diced
1 red bell pepper
1 tsp cumin
salt and pepper
1 15.5 oz can black beans
3/4 cup shredded vegan cheddar cheese
Directions:

Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
Cut the zucchini in half lengthwise and scoop out the center using a spoon to create a hollow space. Leave about 1/4 inch of flesh around the edges.
Brush the inside of the zucchini halves with olive oil and sprinkle with salt and pepper. Arrange the zucchini halves on the lined baking sheet (cut sides up) and bake for 20 minutes or until tender.
While the zucchini is baking, heat a skilled over medium heat. Add the olive oil and saute the red onion and bell pepper until they are tender about 5 minutes. Add the garlic, cumin and black beans and saute for an additional minute.
After the zucchini are finished cooking fill each one with the black bean mixture. top with the vegan shredded cheddar cheese and bake for an additional 5 minutes. Serve hot and enjoy!
